Tembaga, a longevity and community-based experience
Welcome to Tembaga Restaurant, where our nourishing repertory expresses the principles of growing, transforming, and sharing. Through them, we are glad to give you a first approach to the features of our gastronomic concept: Copper, Mycelium, and Longevity.
As a restaurant, we are not just focused on food. We share knowledge. That’s why, while spending a moment with us, you can access the ultimate gateway to a long life: The Longevity Experiment. Would you like to live longer and better? By taking this path, you are choosing to be part of an experience focused on feeding your gut with anti-inflammatory ingredients, highlighting those most connected to longevity.
Let us also share our fascination with mushrooms and fermented ingredients, which are today’s foods of the future. We are building a “Mycelium House”, an exclusive space to grow our mushrooms and turn them into the star of the restaurant. In the same way that mushrooms equal longevity, fermentations and vinegars play a similar role. All of them can be found in our food menu, and also in our bar. Yes, longevity cocktails made without sugar, featuring mushrooms and fruit vinegars!

Middle Eastern Harvest Delight, Roasted & Fresh
A base of carrots, beetroots, king oyster mushrooms, and leeks, served in a goat labneh cream, dried tomato pesto sambal, fatoush (deep-fried pita bread), and fresh herbs.
Longevity Nasi Goreng, Sautéed
Sautéed cauliflower “rice”, the Chef’s Bumbu (marinade), seasonal vegetables and leaves, mushroom sate, and poached organic duck egg (seasonal).
Rustic Fusion Tart: Jicama and Apple Delight
One of our favorites turned into a tart. Jicama combined with Malang apples in a rustic tart. On the side: cinnamon gelato.
